Simple and delicious cabbage with tomatoes, baked in the oven
As most of my readers know, I’m all for easy, simple recipes that don’t need tens of obscure ingredients you can find in one store about 100 km away. Today’s recipe is just that – simple, yet elegant three ingredient roast cabbage with tomatoes. Preparation is quick, ingredients are just cabbage, tomatoes and seasoning.
Cabbage is filling and contains lots of fiber and cellulose. Eating it raw may disturb some sensitive stomachs, but well cooked it’s great for everyone. Although a bit under-apprecated, cabbage can be a great dish for lunch or dinner.
As I promised, this recipe has just 3 ingredients:
- 1 medium to big head of cabbage
- 1 can peeled and chopped tomatoes
- salt and cooking oil to taste, suggested spices: black and red pepper, oregano, cumin
Start by pre-heating your oven to 220 C / 430 F. Shred the cabbage in small pieces. You can use a grater, shredder or just cut it up with a large knife. Using your hands, press and crush the cabbage, adding a bit of salt and oil in the process.
Pour a can of peeled and chopped tomatoes and add the preferred herbs and spices. I used some black and red pepper, a dash or cumin and oregano. Add about a glass of water and stir well.
That’s it – now put your tray in the oven and roast for around an hour. Stir every now and then. Enjoy!
