Very delicious and quick nettle rice soup, all vegan – hearty and thick!
A hearty and warm soup can make the worst day better, don’t you agree? I love me a hot bowl on a cold night. It warms my very soul. And, don’t even mention the health benefits of a rich vegetable-packed soup.
When I made this nettle rice soup today, I was at a countryside house with limited access to kitchen appliences. This did not get in the way at all – this is how easy this recipe is! Based on fresh green nettle and rice, this soup is heartwarming and amazingly healthy.
The quality of the nettle is crucial for this recipe. This delicious nettle rice soup is great with freshly picked nettle that you can’t find in most supermarkets. I suppose frozen greens can also be used, but today I was lucky. I found a lady selling freshly picked nettle at the small town’s farmers market.
After I got back home with the fresh nettle, I immediately decided that soup is the best way to cook this amazing vegetable. Nettle is rarely used in recipes nowadays, which I believe is wrong. It’s very rich in vitamins and iron and most vegans lack enough iron in their diet.
This is one of the reasons I strongly recommend to try more nettle in your daily meals, starting with my nettle rice soup!
- 1 packet (about 300 g) of freshly picked nettle or as an alternative, any fresh or frozen greens such as spinach etc.
- 1 head onion
- 2 gloves garlic
- 100 g white rice
- 1 small potato
- salt and paprika
- olive oil

You will need a big pot to cook this soup and some time and patience to prepare the neetle. The most important step is – never forget your gloves! Nettle stings a lot if you touch it with your bare hands and you will regret it.
Wash the nettle carefully and remove any particles that may get caught in the leaves. With a sharp knife, chop the neetle finely into small pieces. Chop your onion and garlic and sautee until golden, then add the salt and paprika. Add about 2 1/2 litres water and bring to a boil.
When the water starts boiling, add the chopped neetle and boil about 5 minutes. Then add the chopped potato and white rice. Boil on medium heat for about 20 minites or until the rice is well cooked. The consistency of the nettle rice soup will be thick and rich.
Voila, the nettle rice soup is ready! Best served hot!
