Quick and easy breakfast banana bread

The banana bread is a classic, easy recipe that is just made to be veganized. I love making it and have never had a single complaint “oh but this is vegan”!

The banana bread is perfect for breakfast or a non-pretentious dessert. You can bring it to a family gathering, office party – it’s versatile, it’s easy and you’ll never get it wrong. It’s great fun to make it with your kids, so let’s jump right in!

Ingredients

  • 3 ripe bananas – the riper, the better
  • 2 ½ cups of all purpose flour
  • ¾ cup of sugar1 cup of oil of preference – coconut, sunflower – whatever you have
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon nutmeg

Note! If you’re oil-free, substitute oil for the same amount of applesauce

I’ve added the dry ingredients to the banana puree and am about to add some oil to the mixture

Preparation

Start by preheating your oven to mid temperature – around 180 – 200 C or 350 – 380 F. In the meantime, puree your ripe bananas in the blender or mash them with a fork. It really doesn’t matter since the batter doesn’t need to be uniform. I used a blender since I needed it anyway for my next recipe, but feel free to go at them with a simple fork! Add your oil or applesauce and stir well.

After the wet ingredients are well mixed, add flour, sugar, baking powder, cinnamon and nutmeg (or vanilla, if you’re looking for a simpler taste). Once the dry ingredients are in the same bowl with the wet, stir but do not overstir! Only lightly mix until you get a semi-uniform batter looking similar to what I have here:

Thick and semu-uniform batter is best

Grease and flour your baking pan and pour the thick mixture in. Remember, lumps in the batter are OK, no need to stir aggressively. Bake around 40 mins until the banana bread is nicely roasted on the outside and slightly moist inside.
