Vegan green lentil stew with mushrooms and broccoli
This one pot green lentil stew is for everyone with meat loving friends or family who are hesitant to try more vegan recipes
I’m sure you’ve heard it before – my partner or friends don’t want to try my vegan cooking. Many traditional family members are prejudiced towards all vegan food. Some even outright refuse to taste it or have it in the house.
That could be disheartening for a new vegan or even for someone who is experimenting with plant based meals. My advice would be – don’t get offended. Everyone has their own views on food and some people aren’t haters on purpose – maybe they don’t know how delicious vegan food could be.
So, instead of arguing – bring over some of my green lentil stew and make them regret not having tried it earlier!
- A medium-sized white onion
- 1/2 head of broccoli
- A cup green lentils
- A cup sliced mushrooms
- 1 teaspoon of cumin, red pepper, black pepper, sumac, table salt
- 2-3 tablespoons olive oil (or other cooking oil)
You will need a wok-style pan or another pot in which we will prepare this stew. Heat the oil in your pot of choice. Sautee the sliced onion and mushrooms until golden.
Clean and separate the broccoli in small roses and add in the pan. Sautee again for 3-4 minutes. Add all spices and stir until well mixed.
Add the lentil, mix well and pour 5-6 cups of water. Depending on how thick you want your green lentil stew to be, you can add a bit more. Broil your stew for about 45 minutes or until well boiled.
Serve warm over mashed potatoes or rice. Or, enjoy the lentil stew on its own with a slice of bread!
