A simple and quick lunch salad when you don’t have the time to cook

There are these days when I barely have any time to eat, because I am swarmed with errands to run. We all know what that’s like. We also know that it’s super important to keep your body fuelled properly to meet the demands of the day. This is what my lunch salad with beans is all about.

This is why I always keep my pantry stocked with basic foods and fresh ingredients. This will let me pull together a quick bite before I have to get back to work.

This quick and tasty salad is an easy way to wrap up a hassle-free, easy lunch so let’s take a look!


  • A can white beans, drained and rinsed
  • 3-4 roasted peppers (I prepare them in advance and keep them in jars in my pantry)
  • Medium-sized red tomato
  • Ripe avocado
  • Small white onion
  • Parsley
  • Lemon juice, salt to taste

This recipe is quite simple and quick to make, so are the instructions. Start by draining and rinsing your can of white beans. Peel and chop the vegetables – peppers, onion, tomato, avocado, onion, parsley.

Mix them and add salt, freshly squeezed lemon juice and olive oil. Serve cool with a slice of bread. Enjoy!
